Baked Hawaiian Oatmeal

Juicy bites of pineapple, mixed with chewy oats and sweet coconut to give this baked oatmeal a fun tropical twist

Ingredients

  • 4 eggs
  • 1 1⁄2 cups granulated sugar
  • 2 1⁄2 cups Raley’s all-purpose flour
  • 2 1⁄2 cups Raley’s crushed pineapple, drained
  • 3 cups Raley’s shredded coconut
  • 2 teaspoons baking soda
  • 1 1⁄2 cups Raley’s old fashioned oats
  • 2 teaspoons Raley’s salt

Directions

  1. Combine the eggs and sugar, beating until light.
  2. Sift flour, salt and soda; add to egg mixture and beat until smooth.
  3. Add the rest of ingredients and mix well. Spoon batter into a greased and floured 9×5 loaf pan.
  4. Bake at 325°F for 1 hour.
  5. Remove from pan immediately.
