CHICKEN LEG SECTION (DARK MEAT)

The meat from the back half of the chicken is commonly referred to as “Dark Meat” because the higher concentration of muscle and fatty deposits in the legs causes a darker color and higher moisture content than the breast and wings.  It is the fat which gives the dark meat more moisture and flavor (and a few more calories).  That is also why the majority of the world’s population prefers dark meat over “white”.

 

The dark meat consists of drumsticks, thighs and backs, in that order. Common packaging of the “dark meat” includes:

Chicken Offal's and By-Products

Sold separately, the most sold are Hearts, Livers, Gizzards, Necks and Feet or Paws. Ground chicken is popular for burgers or a mixed ingredient to your favorite recipe. Offal and by-products are sold frozen to lock in freshness. For retailers tray-pack and cup-pack are obtainable.

 

All items may be packed in various forms for retail, foodservice and bulk export packs.

Turkey offal is typically packed in 30 lb export cartons. Offal ex the carcass packed and quick frozen for freshness. Turkey trim and MDM is typically used for further processing such as lunch meats.
